Sweet potatoes pack enough flavor that they won’t get lost in casseroles, pasta dishes or even chili. But they can also be used as a subtle flavor in homemade pasta or breads. The bright orange colour shows that this is a vegetable that is worth working into your diet because of the high antioxidant content, said Mary Ann O’Dell, registered dietitian for Akin’s Natural Foods.
“They are high in beta carotene, which is an antioxidant. Beta carotene converts to vitamin A in the body and is very good for the eyes, immune system and skin,” O’Dell said.
